Tips for Beautiful Bark and Snappy Brittle

For glossy, snappy bark, temper your chocolate. Melt two-thirds of your chopped chocolate in a double boiler, then remove from the heat and stir in the remaining third until smooth. This brings the chocolate into the right crystal structure so it sets with a snap and a shine, not a dull, streaky finish. If you don’t want to temper, use chocolate wafers or candy melts — they’re already formulated to set without tempering.

For brittle, the sugar stage is everything. Use a candy thermometer and pull the syrup off the heat at exactly 300°F (the hard-crack stage). Below that, your brittle will be soft and sticky. Above 320°F, it will scorch and taste bitter. Have all your mix-ins measured and your sheet pan prepped before you start — once the sugar hits temperature, you have about 30 seconds to work.

For gifting, layer bark pieces between sheets of parchment in a tin or bakery box. They’ll keep for 2 weeks at cool room temperature, 3 months in the fridge, and up to 6 months in the freezer. Brittle keeps similarly well, though it can absorb moisture if not stored airtight. A silicone gel packet in the tin helps.
