Tips for Baking with Bourbon
When you’re cooking with bourbon, a little goes a long way. Most of the recipes below use 1 to 3 tablespoons, which is enough to add that warm, oaky depth without making the dessert taste boozy. If you want a more pronounced bourbon flavor, you can usually double the amount — just be aware that the alcohol won’t fully cook off, so the dessert will have a kick.
For the deepest bourbon flavor, choose a mid-shelf bottle you actually like to drink. Cheap bourbon can taste harsh and almost medicinal in a finished dessert. Buffalo Trace, Woodford Reserve, and Maker’s Mark are all great mid-range choices that round out beautifully when paired with chocolate.
To get the most bourbon flavor into a batter or frosting, add the bourbon at the end of mixing. High heat can drive off the volatile aromatics, so anything you add to a hot pan will lose some of its character. Stir it in at the end, off the heat, and you’ll keep that gorgeous bourbon nose in the final dish.
