This skillet cookie is the answer. It bakes in 12 minutes, comes in one perfect portion, and has those crispy edges with a soft melty middle that cookies from a tray just can’t match. My Quick Method
Step 1: Preheat the skillet. Place a 6.5-inch cast iron skillet in the oven. Preheat to 350°F. Let it heat up while you make the dough.
Step 2: Cream the butter and sugars. In a small bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 1 minute.
Step 3: Add egg yolk and vanilla. Beat in the egg yolk and vanilla until smooth and glossy.
Step 4: Mix dry ingredients. Add the flour, baking soda, and salt. Stir until just combined — don’t overmix.
Step 5: Fold in chocolate chips. Reserve a few for the top. Fold the rest into the dough.
Step 6: Press into the hot skillet. Carefully remove the skillet from the oven (use oven mitts!). Press the dough evenly into the hot skillet, then sprinkle the reserved chips on top.

Step 7: Bake. Bake for 11 to 13 minutes, until the edges are golden brown and the center still looks slightly soft. It’ll firm up as it cools.
Step 8: Serve warm. Let cool for 2 minutes, then eat straight from the skillet with a spoon. Add ice cream if you’re feeling fancy.
Creative Twists
- Use browned butter for a toffee-like depth of flavor.
- Add a tablespoon of peanut butter chips for a peanut butter cup vibe.
- Sprinkle flaky sea salt on top right after baking.
- Mix in a tablespoon of espresso powder for deeper chocolate notes.
